SCA Introduction to Coffee
Perfect start to learn more about speciality coffee. This is a course that will introduce you to all the key concepts in speciality coffee.
Based on the SCA programmes of Green Coffee, Sensory, Roasting, Brewing and Barista, you will learn how coffee is produced, harvested and roasted, how to taste and assess coffees, how to brew coffee using filter methods or with espresso.
This course is globally accredited via the Speciality Coffee Association (SCA), if you take the SCA Certified Exam (CHF 70.-) you will earn 10 points towards your SCA Coffee Skills programme.

SCA Barista Skills Foundation
A one-day course covering key Barista skills: grinder settings, espresso extraction, milk steaming and menu. This is the ideal class for you if you want to learn more about espresso-based coffee or want to become a barista. You will learn the essential skills of dosing and tamping, grind adjustments. You will then learn how to steam and pour milk to make beautiful flat whites, lattes and cappuccinos. By the end of the day you will be confident in making the full espresso-based menu and be able to use the machine and grinder.
This course is accredited by the Speciality Coffee Association (SCA) – if you take the optional SCA Exam (CHF 70.-) you will earn 5 points towards the SCA Coffee Skills programme. This is a full-day class running from 9 am to 5pm, including an hour lunch break.

SCA Barista Skills Intermediate
A two-day course introducing extraction theory, professional tasting and brew recipes. You will also improve you milk steaming with a latte art module. Building on the Foundation level, this course is designed to get participants to work as a Barista. We will show you how dose, output, water temperature and the use of a refractometer will influence your brew recipes - this will optimize your coffee experience!).
This course is accredited by the Speciality Coffee Association (SCA) – if you take the optional exam (CHF 205.00 or CHF 125.00 for SCA Members) you will earn 10 points toward your SCA Coffee Skills Programme.
SCA Barista Skills Intermediate is a two-day class, running from 9am to 5pm on both days, including a one hour lunch break.

SCA Barista Professional
On this three day course you will be taught the cutting edge concepts and techniques of the best Speciality Coffee Baristas, making this course essential for Baristas, trainers and dedicated coffee professionals. We will explore, design and evaluate brew recipes that are specific to the coffee, machinery and environment that you work in. We go in-depth into espresso extraction. We will analyse café design, workflow layout and financial management. We will explore water chemistry and you will learn how to test water, the effect on flavour and how to use different filtration methods to optimise your water to SCA Standards.
You should have completed the SCA Barista Intermediate course to enrol on this course, and ideally have experience as a barista.
This course is accredited by the Speciality Coffee Association (SCA) – if you take the optional exam (CHF 305.00 or CHF 215.00 for SCA Members) you will earn 25 points toward your SCA Coffee Skills Programme.

SCA Brewing Foundation
This course teaches you the key skills to brew great coffee .
If you are a home brewer or want to introduce brewed coffee to your cafe menu, this course will introduce you to the technique and theory needed to get the best out of a range of brewing methods.
We look at a range of brewing methods: French Press, Aeropress, V60, Kalita, Batch Brew.
This course is globally accredited via the Specialty Coffee Association (SCA) – if you take the optional SCA Certified exam (CHF 70.-) you will earn 5 points towards your SCA Coffee Skills Programme.
SCA Brewing Foundation is a full-day class, running from 9am to 5pm, including a lunch break.

SCA Brewing Intermediate
On this course, we use the SCA Brew Control Chart system to understand and perfect your brews. You will experiment with multiple variables. Grind size, water temperature, contact time, agitation and brew method.
We also look at water quality and consider how to properly extract coffee to optimise flavour.
This course is globally accredited by the Speciality Coffee Association (SCA) and if you take the exam (CHF 205.00 or CHF 125.00 for SCA Members) you will earn 10 points towards the SCA Coffee Skills programme.

SCA Brewing Professional
A three day course. You will learn about the interrelated effects of the following variables in brewed coffee: freshness, roast level, grind, water chemistry and brew recipe. By the end of the course you will be master the brew control chart, design various recipes to achieve your flavour and extraction goals. You will analyse water chemistry and explore different water filtration methods. On completion of the course you will be able to do effective quality control.
You should have completed the SCA Barista Intermediate course to enrol on this course, and ideally have experience as a barista.
